		I've really enjoyed some baked catfish. I know it's not TD's preferred. But long- low- and slow seem to be the key.  Not quite, but almost like making beef ribs. Want them to melt off the bone.  
 
Of course - I pound 'em with Cajun spice or some such, then get accosted for making food too spicy! [ ]
