I also do my own (with the exception of grinding burger). I am very fussy and don't want anyone else's meat in with mine. I have a local butcher grind my "trimmings" into burger to my specs (10% pork fat). Its saves a ton of money to do it yourself, plus no one is skimming any of your meat, its as clean as you are, and its enjoyable too.
